I bagged these yesterday. My boy Ace doesn't look to happy being in a picture. I am feeling a bit lazy today so I will only breast them. I already searched the forum for a recipe and saw some ggod ones. Anyone have a favorite recipe for goose breast that you don't mind sharing?

That is not right! Killing our National bird like that. We only have a few hundred billion of them left. Most of them don't even fly south anymore :laugh:

I find it hard to "hunt" something I have to chase in droves off the putting green :woohoo: I'm not a waterfowl fan, but surely someone will have a good recipe for you.

I've always like this recipe:
Pluck and clean the goose.
Place it on a maple board.
Using poultry shears, cut the bird down the backbone.
Push the bird - breast side up- until it is as flat as possible.
Using a mallet, pound the bird until it is even flatter.
Liberally sprinkle with salt and pepper.
Place the board with the bird on a medium grill at about 350 degrees.
Allow it to cook for 1 hour.
Discard the goose and eat the board. -

Jeez.... you eat those things? Isn't that like eating seagull or crows? Although we have no national bird, this one is a close second in the polls... apparently. I guess the people that voted haven't been chased or hissed at by them or stepped in the tons of Goose poop they leave EVERYWHERE.

Not really an 'Egg recipe, but my mom always used to partially freeze the breasts to allow easy cutting, then cut them up into about .5" thick french fry shapes across the grain, batter them up and deep fry them. Good eats for sure! I guess you could call them goose fingers.

I am jealous,I have only shot one goose for the season and that was a small snow.The bacon wrapped ,jalapeno and heese stuffed thing is always tasty.

Actually it is. If you can make sure you get enough of the fat to render off without making it dry, it is right tasty.

These guys obviously don't appreciate good eats!! Here's the DEAL.
1. Ripnem's neuberg recipe is good. Fact.
2. If you have a grinder, get ya some Nesco original jerky seasoning. Gring that stuff up and mix with lean burger. Mix it up and shoot it out a jerky gun and either dyhydrate or smoke on the EGG.
That's my $.02 worth of opinion. -

The ONLY geese I ever had that were fit to eat were smoked.I have no idea how.I was 14 years old and we went on a hunt in Olive Branch Illonois.A old man in the group took all the geese home and smoked em.YUM. :huh:

Momma doesn't allow me to bring anything but beer in the boat. Goes back to when Captn Morgan almost sank the ship! He gets whipped up pretty easy so he's best left on land. Same goes for shine based on my recent experience :laugh:

Don't know if I can just smoke the breasts. But I can try. Usually I cube them up mix with a gravy and cover some rice. Just looking for something different.

Brine the breasts with salt and brown sugar, wrap in bacon and smoke them, low and slow. Also, leave them on the bird, stuff the cavity with apple, onions, or your favorite veggies. Season the breast, wrap in bacon, place in a cheesecloth and smoke them. You can do them in a crock pot, sliced in medallions with your favorite veggies in a can of condensed soup of your chose.
