Sometimes it’s difficult moving an idea from my head to the plate in its true conceptual form. Usually around the midpoint of putting a new cook together its flaws become apparent. Often this leads in a different direction for a future cook theretofore not considered. An example was how the quality of the finished cannolo tubes suffered due to the lack of exposure to heat on both sides of the dough - this left a texture on the interior that was not as good as it could’ve been; something I didn’t see coming but certainly would have had I really thought it through (or if I had a bigger brain like that man stike :ermm: ). Preheated dowels would have yielded better finished tubes however the only practical way to do that would involve foregoing the shape (the connected ‘ends’) leaving an open ended shell. But that would look more like a taco :huh:
Thus, the inception of the next generation:
Started with smaller dough balls
Went with a higher temp and a new dowel system that could be sufficiently preheated retaining enough heat to become a heat source itself:
The finished pizzaco shells:
Stuff’m however you see fit, I had some leftover turkey meatballs from last night’s dinner, hot sopressata, mozzarella & plum tomatoes:
And that’s how its done.

holy crap, that is funny. I was at about row 7 at the Spectrum for the Fair Warning tour, oh my. There was a guy in the seat directly in front of me that puked on the guy directly in front of him. I guess on that night row 7 was better than row 5 :laugh:happy in the hut

I saw every single VH tour at least once, and most of them several times, until they hired Gary Cherone. If they tour again this summer I'll be in line for tix. My favorite band of all time.
I'm one of the few that like both Diamond Dave and the Red Rocker as the front man. Like two completely different bands, and both terrific in their own way. -

My favorite album was 1984, but for the lesser known tunes. Panama had a good riff, but for me House of Pain - and Drop Dead Legs (God the guitar in that!) - were incredible songs.
Then you have Hot for Teacher, Top Jimmy, I'll Wait.....I need to listen to that album again. Good stuff. -
thanks beli, it was fun to do. I think if my kids were younger it would be great & fun for them, make a bunch of shells & have them stuff them with whatever they want... kind of like the build you own pizza parties we used to have for them -happy in the hut

Even IF your food sucked your music makes me feel 18 again!!LOL Been down loading some early/mid VH off Napster last few weeks in fact. If you haven't checked it out you should. For like 14 bucks a month I can down load almost any song from any time period from any genera on my MP3 and its totaly legal as I can't burn the song. If I don't keep my membership up the song "dies" in a month on my MP3. Led Zep, AC/DC and Bob Seager are about the only thing I cant get all there songs.
Was going to tell you to preheat a couple pieces of 2 inch stainless pipe for your cook but looks like you got a system worked out!!LOL Your dang snow is heading to South Arkansas. Need to learn to control it and keep it up there! :pinch: -

have you considered buying some pipe for the molds? would allow you to skip the aluminum foil, which probably insulated you from the hand-held weights more than anything. nice to see you use those for something, by the way.
