Picked up some fresh flounder at the store, thought it may be too thin to blacken, but turned out great.

The raws:

Used paul's blackening seasoning with some melted butter.

CI skillet with dome at 500.

About 2 minutes a side:

Plated with the parr family spaghetti salad recipe and green beans, great summer meal.

Got to love blacken fish on the Egg! Nice that you can get fresh seafood. I do catfish all the time. Quick and easy but taste great. Well done! :woohoo:

Now that's what I call "Blackened Flounder" ! :woohoo: :woohoo: :woohoo:

If it ain't smokin' so thick you can't see the fish, it ain't truly blackened!

    That's my mantra!

Flounder is easy to over cook. Looks like you did a fine job.
