TRex,[p]Yep....during the holidays I make salami for a bunch of people...[p]It is usually around 50 lbs....5 lbs makes 6 logs...[p]I did the extra 30 lbs for a friend and he bought everything and threw some cash my way to do it for him...[p]I can do 30 lbs in no time...It is an easy recipe and most of the time is spend letting it sit in the fridge over night![p]Now the only real problem is that my fridge smells like salami and my wife is complaining...LOL

TRex,[p] Three different types of Fatties.[p]The one on the left was stuffed with cheddar cheese and Jalapenos, the one in the middle just cheddar cheese, and the on on the right was for the wimps I was cooking for.[p]All three were coated with Emeril's Essence.
