for those of you not paying attention last week, or were otherwise asleep at the wheel, a group of folks decided that, in honor of good eggfriend and most eggcellent photographer of all things good (including roosters), john "woodoggies" kovo, we would no longer be celebrating tuesday, but rather, the second day of the work week will forever be referred to on this forum as "WOOSDAY", and with it, we should all post our best pics from the last week (and other times). . .[p]now, after this last weekends "rack" frenzy, we thought we should dedicate this first "WOOSDAY" to "racks". ..sparerib racks, babyback racks, beef racks, and whatever other "racks" may suit your fancy. . .however, PLEASE post whatever pics you'd like. . .the point of this weekly thread will be to provide enjoyable viewing for all of anything that pleases the eye . . .[p]so hear goes. .. .first up, my babyback ribs cook from this past weekend:[p]

Morning mad max beyond eggdome:[p]While I did do three racks of babybacks this past weekend, I didn't get the camera out to take any pics, so here are a few shots of past rib cooks.[p]Just about ready to come off!

And one of my all time favorites -- six (yes 6) racks of babybacks on a medium! This was about half way through the cook.
[p]and the finished pile plated and ready to be devoured.

She saw the camera out when she came home from shopping and said, "oh good we are having something off the egg"... "You should get a shot of the 'chimney' - it looks like a train coming"[p]She not only knows I have gone overboard - she now instigates it for her own entertainment!

I have found that the bacon serves a few purposes. I only do the bacon for the first three hours, aside from basting the ribs with bacon goodness to help in the moisture content of the final product, it gives a very subtle hint of bacon taste (not slaty - just slightly flavored).[p]I use the bacon after it cooks on the ribs to flavor my baked beans or as a pizza topping. It adds fantastic flavor.
