Just got a Costco membership and was fortunate to find these "USDA choice" New York strips. I'm no expert on grading, but the marbling on the package I grabbed was way better than the rest in the case and looked more like prime to me. $7 a pound was nice bonus. They were plenty thick so I reverse seared (250 until 113-115 and then 90 seconds per side at 600 degrees). Very happy I didn't screw these up. Thanks for looking.

That's a plateful of my favorite right there. I picked up some of the same over the weekend, not quite as marbled as those, but choice+ for sure. Now I can't wait to cook them.

Great job. We grilled 2 of these last night also. Costco has great meat. We went raised direct starting at 250-300 then bumped the temp up to 450 for a sear. We also did a few shrimp for a surf.
