Chuck Roast. Somewhat in the Style of Dixie.

Here is a one pot wonder that I did the other day. If you are into the "one pot" meals, then this is right up your alley. Simple and delicious. If you have a PC, this can be done in about a hour instead of a day. 
Ingredients:
Salt to taste.
Pepper to taste.
Cayenne. If you are a brute, 1/4 cup. If you are not a brute, then to taste.
1 whole onion.
Mushrooms.
Carrots.
Potatoes.
4 cups beef broth.
2 cans of cream of mushroom soup.
2 cloves of pressed garlic.
1 stick of real butter. 
2 Bay leaves. 
1 chuck roast. 

The stuff. 

The meat. 

Seasoned and ready to brown. 

Note- Add the cayenne after you brown the meat. Cayenne loses its potency when fried. 
Brown the meat, onions and garlic. 

After browning, add everything EXCEPT the vegetables and pressure cook for 45 minutes on high. 

After 45 minutes, do a quick release and add the vegetables. 

Cook for 15 more minutes at high pressure and she is a done deal. Use a natural release for this step. If you are in a hurry you can cook for 20 minutes and do a quick release to save a few minutes if need be. 

This PC roast is outstanding. It's fast and cheap to boot. As always, I hope y'all enjoy this one pot meal done sorta in the style of Dixie. Thanks for looking.

    Looks fantastic and a great way to cook chuck roast. The pressure cooker is a marvelous piece of equipment. The "Somewhat In the Style of Dixie" is incorrect. You do have a stick of butter in there and that qualifies as true Dixie, lol.

    I agree 100% sister. For somethings the PC simply has no peer. Now that I have one of the electric models, I find myself using it just about everyday for something. There will always be a place for the traditional pressure cookers and canners, but for everyday normal meals, the electric models are just far more user friendly and practical. If they ever release a electric that will run and hold 15 PSI, I will probably never use a conventional PC again. And thanks for the compliments sister. It's much appreciated.
