Sunday Ribeye Cap for Wife's Birthday

So today was my wife's birthday and she requested some red meat for dinner. I found a couple of rolled Prime Ribeye Caps at Costco and decided that's what we would do.

For seasoning I put some simple salt, pepper and garlic powder on both sides.  I fired up my LBGE to about 250F with a chunk of oak and cooked (indirect) until I got an internal of 120F.

I then removed the PS, put in a CI pan and let it up to about 650F.  Put both pieces back on for 75s per side. Perfect! Served with a wedge salad and Hasselback Potatoes. Good meal.

    I would only buy that from now on. But I've never seen a ribeye cap available anywhere but SRF

    This meal looks Awsome! I have Also never seen this cut offered except from SRF, I am sure the other butchered part was packaged as eye of ribeye roast/steaks.

    @Thatgrimguy & @Grillmagic ... Yeah I was surprised to find these at Costco as I wasn't looking for this. Just lucked out I guess. However, my Costco doesn't do whole Brisket Packers.

    I am jealous. Been looking for a while, and I can't get that cut up here, unless of course I buy the whole ribeye and cut the cap off myself.

    It wasn't cheap...2-1lb pieces for $33. It was worth it though. So good.  They cut and chewed like butter.

    I have been wanting to try these. For some reason they like to sell these in 6 packs at my local Costco and at $18.99 a lb it's pretty expensive. Yours look great I am jealous.

          When you guys really heat up a CI pan like this, do you have any oil/fast  in it? My CI pans are all well seasoned and when I get them super hot, the residual oil burns and adds an unpleasant flavor to the crust.

    I did not put anything in my CI before putting on the meat.  I have mine pretty well seasoned, but after every use I wipe it out with some warm water, just a little soap and a sponge.  After it's rinsed I put it on the burner and let it go for a bit to dry it and burn off residual crusties.  Not sure if that is the best way to go about it but I haven't had any issues yet.  As far as this cook went, no bad or residual flavors.

    May want to try some Ghee. I have not tested it at that high of heat but for stuff in the frying pan it doesn't burn like butter.

    Oil the meat, not the pan, with some high heat oil like sunflower or grape seed. If you oil the pan the fire can jump in the pan when you flip. Don't ask how I know. That's ok if your going for Pittsburg style, but a bit cumbersome otherwise.
