Turkey Breast with Cranberry,Orange & Ginger Relish

Options
Boneless and skinless Turkey breast brined for 5hrs and rubbed with 50/50 of Tsunami Spin and Old Bay & egged at 275 indirect with hickory and cherry.  Green Beans were done in the CI DO on the small at 300 for about 4 1/2hrs.

    @theyolksonyou - the relish was crazy easy. It called for 12oz of fresh or frozen cranberries. All I had was dried so I rehydrated them in some boiling water. You use 1 navel orange with the skin still on and 1tbls of minced/grated ginger.  The recipe said to pulse it in a processor but I used my KA grinder to get a more even grind. Once it was ground up I mixed in about a tbls of sugar to knock the tart down just a bit.

    The relish recipe is about 2 post above your.  The beans are pretty easy too. I had 1 1/2lbs of fresh Green Beans from FM that I snapped and put in the CI DO and barely covered with a mix of water and chicken stock with 4 slices of bacon that were chopped up. On to the egg and the were mildly boiling the entire time.  When the liquid is all gone the beans are done.  It's kinda the my grandmother use to make them.  She called them Scorch Beans because if you miss it at the end you will scorch the beans.
