Reverse sear goodness

Actually took some pics so thought I would share. I used the woo 2 with a smaller grate close to the coals- then put round stone and larger grate on top. I find it easier to go to the sear stage going this route. Cooked steaks at 300 till 115 internal with one chunk of mesquite. Then pulled heat shield and let it rip- seared 1 min/side and they came out perfect. Added a little finishing butter once inside.

Brother I could eat it all myself! Excellent looking. I too like a little dab of butter on my steak. Nothing quite like it for sure. Again excellent job. Here is one I had with just a little butter.

Reverse sear is my favorite what to go and adding a compound butter at the end is one of the best ways to finish off a steak. I like using a cajun butter that I mix up with red, white, and black pepper, garlic, onion, and thyme.
