I am doing my first pork but. At what temp should I take it off?

    Pork butt at 145*? Or did you misread that? Pork butt take to 185* for slicing or 195*-205* for pulling. For pulling you want to be able to slide a probe in and out like warm butter, that's your finish indicator.

    For pork loin, 145* is a good target temp.

    I read pork loin and not pork butt. I guess I have a loin on my mind.
