A few chickens end up back in an egg

Today I was tasked with cooking the protein for a party. While I was looking forward to tri-tip or perhaps some prime rib I was asked to do chicken. Well, alrighty then.
I started with a couple of these
Re-introduced them to an egg
And wound up with
While the meat was moist, tender and smokey the skin left something (or a lot of something) to be desired. They took ~2hrs @ 225 IIRC.

I ass a little corn starch to the skin and let air dry in the fridge over night- I also cook raised direct at 350-400. Skin gets pretty crisp- give it a try and let us know which one you like bestGreensboro, NC

They look ok, but you'll never get crispy skin at 225. Chicken, IMHO, doesn't really benefit from a low and slow like brisket or butts. Do what @Wolfpack says and bring it up to 350-400 next time.

I've started using the beer butt method again. To me it's just as tasty and I get incredible crispy skin with nothing but evo and rub. Indirect at 400. I'm sure I'll get kick off for not using the spatchcock method.Green egg, dead animal and alcohol. The "Boro".. TN

Direct and 400 raised works foe me on chicken and turkeySalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
