Need help on timing for post golf outing feeding frenzy with pork butts

I am having 30 - 40 guys over Friday around 6pm after 36 holes of golf. I am going to do 3 pork butts on XL. If I start them at 10pm Thursday night and keep the temp around 220 degrees can I get away with cooking them so long? I am trying to avoid getting up at 4am Friday (on a vacation day!!!) to cook them for 12 hours by the time the temp stabilizes, etc. Thanks for the help (btw anybody have a great baked bean recipe?)

you can do that. They can take 18-20 hrs at that temp. You can always bump the temp up to 300 when you get home if they aren't quite ready. That time and temp should get you through the stall before you come home so you can push it through if you need to.One thing to remember, when you are at 220 dome, you are pretty close to 200 at the grid. You are shooting roughly for 200 internal butt temp so it will take a long time at that temp to get them done.Keepin' It Weird in The ATX FBTX

New data - I bought six 5 pound butts - smaller than I have cooked in the past - with them that small I am guessing my best bet is to start them all together on one XL and cook them for 12 hours or so _ my only geartburn at this point is if i can fit all 6 on an XL

Get them done before golf, they can rest in the cooler (FTC). A round of golf takes 4 hrs give or take a little, the cooler should handle that !

All good. I actually shoot around 70 when I play... Then leave the course after the twelfth hole.

Last time I did pork butt I had two 8 pounders, It took 11 hours at 275° Pulled Pork one day / Carnitas the next since yours will be smaller it should be less time, just trying to give you somewhat of a timeframe.As far as the beans go, I have found a great recipe from Steven Raichlen Best Barbecued Beans on the Planet and make it all the time.Good luck and let us know how it goes!Large & Small BGE, CGW Two-Tier Swing Rack for BOTH EGGS, Spider for the Wok, eggCARTen & and Cedar Pergola my Eggs call home in Edmond, OK.

Just did four of them, total weight wad 30lbs. Took 17 hours at 200*, and could have used another hour. I was going for 250*, but the XL had a different thought while I was sleeping. Good Luck!
