Planked salmon oozing

Planked some wild caught Alaskan salmon from Sams Club. This time I used alder wood planks. Can't say I can tell any difference in cedar and alder. These turned out great, moist and flaky. I pulled them at 135 degrees and oozing. Can you see the ooze?

    I go 325 or so and dont get as much ooze.
    Ooze isnt bad tho. Just not photogenic. Like littlesteven

    I still have a lot of salmon from my last trip to Alaska. Have been cooking direct since I don't care for cedar. Was hoping alder would be better. Will try alder this week. Yours looked delicious.

    This month's Cook's Illustrated said if you brine salmon for just twenty minutes, it no longer oozes; but some of us started depending on the ooze to tell us when the fish is cooked.

    I count on the ooze. Salmon without ooze is.......just not right.
