As Mickey said. No foil, spritz, or inject, good coat of rub and rock on, once you foil them on the grill, they sort of steam and it kills bark. Also give yourself more time to cook next go round1 · -

I'm pretty sure chef David at roastfish & cornbread used to be the chef at sea shack. We do the plumbing in sea shack and he left in 2011 I think. Great guy awesome cook1 · -

yes there is a low temp alarm on digiQ...its not a temp you can set, its a margin difference from you desired pit temp i believe...or at least mine is.1 · -
