@stevez, you can fill all the way up to the notch above your finger where the platesetter sets in. That is where I fill for a L&S brisket cook which may be 16-20 hrs on my XL.3 · -

With the settings you stated, my XL would be running about 450*. On a 350* cook, I have the smokeware cap set at about 1/8" and the bottom vent about 1/2 to 3/4 closed.2 ·
