Christmas eve El foldo brisket cook.
This was a small 11lb prime Costco full packer. Trimmed approx 1 lb fat off, rubbed with Kosher salt and coarse pepper, and some garlic rub. Got egg at steady 225 dome temp, put on brisket at 1030 pm…2 · -
