Christmas eve El foldo brisket cook.

This was a small 11lb prime Costco full packer. Trimmed approx 1 lb fat off, rubbed with Kosher salt and coarse pepper, and some garlic rub. Got egg at steady 225 dome temp, put on brisket at 1030 pm Dec 23, finished Dec 24th at 4 pm.Folded point over flat to keep flat out of dome heat, stays moister in my experience. It turned out fantastic,  moist, with kiss of smoke, ( I used 3 chunks pecan).
Served with garlic mashed potatoes,  spaghetti and butternut squashes,  cranberry sauce,  green salad,  cucumber salad.
