@Foghorn The brisket itself was pretty much perfect. I did use a commercial rub instead of my normal brisket rub and didn't particularly like that part.1 · -
SRF brisket
Big boy at 22 lbs pre trim. Didn't weigh the trim but would guess around 4 lbs. 250ish until done. Cooked very fast, about 14 hours, and probing tender at mid 190s. Pics in vanilla order12 ·
