What temp you smoking them? Did you add anything when you foiled them? Butter, broth, etc? You can skip foil and mist them if they look to be cooking fast and drying. Add moisture1 · -

Meat side up. On occasion if I foil with some fixings comp style I put them meat side down into butter brown sugar etc. but other than that meat side up and drink beers while waiting2 ·
