howdy, easiest way to roast after a sear, if running hot, is go up in the dome with the grid/food and drop an indirect piece under the grid. going up adds space between fire, indirect piece and grid.…2 · -

on low and slow bbq cooks in xl and large grills, I prefer to leave the lump grate in under the basket, provides better control of the burn. t1 ·
