    Thanks Cashfan.  Here is my Johnny Cash Story.  In the mid 1980`s I worked for Canada Trust, a Canadian Bank who`s head office was in London, Ontario. Johnny`s agent Saul Israel Holiff was from London Ontario and I guess he had a connection with Canada Trust.  Canada Trust`s first banking machines were called Johnny Cash money machines

    Well he and June did a benefit concert for the employees in Toronto.  I would say less than 1,000 people were there. It was just standing room, no seats. I  was about 15 feet from him for the whole concert. Never really appreciated his voice until I heard him live and up-close - just amazing!!

    Canada Trust has since merged with Toronto Dominion Bank (TD Bank).

    All I remember was my mom using red wine for the shells.  I buy the shells but make the cream.  Here is my cream recipe (from my mom).

    Cannoli Cream


    • small tub (about 475 grams) of Ricotta Cheese (extra smooth)
    • about 1/2 cup powdered icing sugar
    • Whipping Cream - few table spoons to smoothen ricotta
    • Vanilla extract
    • lemon rind zest
    • Chocolate chips


    • drain ricotta cheese over cheesecloth or fine steel strainer. Drain overnight in the fridge if time aloows
    • Combine ricotta cheese, powdered sugar, whipping cream and vanilla extract until combined.
    • fill into plastic bag, cut hole and squeeze into cannoli shells.
    add chocolate chips to the ends of each filled shell

    Full Packard here in Etobicoke/Toronto at the Butcher Shoppe at $4.50 per lb.  Just bought 2 with both being just over 15lbs. Triple A (Eh!) Canadian. Producer is Cargil.
