    Picked up a couple Primes. Cooked raised direct at 300* until 115* IT. Then direct for a few minutes lid up reverse sear at around 550* until done. Kosher salt, cracked black, and EVOO.

    It’s Vigilant, from a DC distillery. Available locally at VA ABC, and likely Maryland. Not sure how far they distribute. I like it. I think it balances a London Dry and a American/New Western style.
