    I just registered.  Not sure last message got through.  But what is your best way to do pastrami?
    I've seen you post a couple different ways.   Do you still like the SV at 135 for 30 hours, then smoke to 145?    Have you ever done smoke to 150, then SV for 24 hours at 155?

    Saw your post on sous vide pastrami.  Do you still like the 135 for 30 hours  then smoke till 125, or do you like meatheads 155 for 30 hours?  What about smoki g first then sousvide? Thanks,
