Turkey Help

Going to attempt my first Turkey on the large BGE. I was wondering for those Eggheads that have tried this before. Is it better with the beer can method or putting the bird in a pan? I'm open for any ideas & suggestions. I've got a few weeks to figure it out. Looking for help in North Carolina.... Oh yeah Go Giants beat Dallas

    If you want quick and easy for your first try, 'spatchcock' it. Which is simply taking out the backbone and flattening it best you can and cook it bones down until done.

    For the more adventurous route, try the MadMax method. It's so popular, you can probably google it and find it. Pretty sure the NakedWiz has it on his site.

    Here's a spatchcocked one. I did it on a raised grid for 1 hr 40 min at 375* until the breast reached 165 and thigh 185-190

    The Mad Max method is terrific. It is a lot about the gravy, which is a little work but worth it.
    If you are after a traditional Thanksgiving recipe you can pretty well follow a standard turkey roasting method, veges in a drip pan under a rack holding the bird, 350 dome[remember, the egg is just an oven, in this case anyway], cook to 165 in the breast and 180 in the thighs.
    One part of the Mad Max method that really helps is the hint about putting an ice bag on the breast for a while prior to cooking. That really helps everything to get done at the same time.
    Pecan chips in the lump will give you a beautiful mahogony color :)

    I've got some Roughed Grouse and Wild Turkey for February. Keep your wheels turning for some good recipes. I'll also have plenty of Neuberg. B)
