Morning All:
Life has been hectic the last three weeks so haven't done a lot of using the Eggs, but mostly just not taking the time to take some pictures.
A few weeks ago I "cured" some pork that a friend had given us and then smoked. One of the pieces was labeled "pork butt", however it was probably only about 2 pounds, if that. Thats why I turned it into a thick ham slice
Tonight I put it on the mini, indirect at 400 until it got to an internal of about 130...here it is just before taking it off...
Also did some sweet potato slices with Pineapple Head...
EggHatter added some veggies and here was the main course...
Planning on doing a lot of cooking this weekend in preparation for being "handicapped" for a few weeks with knee replacement surgery set for Thursday (28th).

You'll be in our thoughts and prayers for a speedy recovery after the knee replacement. Physical therapy will be painful and challenging, but also your best friend in getting full use out of the new knee. Let us know if you need anything! -

Ham and sweet potatoes - can't beat that! Definitely "two thumbs up" at our house. Best of luck with the knee - that surgery is not nearly as bad as it used to be, hope you are up and egging in no time!
