Nobu style Japanese on the mini

someone who wishes to remain nameless [but her initials are e.m.] sent me a book after i posted the squid and octopus cook 2 weeks ago,, so i went to the asian market sunnday,,what follow in this and subsequent posts are my attempts to do justice to the 'gift'

first up dashi, the base for many sauces and also the stock for miso soup.
konbu [kelp] and shaved dried bonito flakes
squid somen on somen noodles [could not find fresh hearts of palm so i used somen noodles] served with sliced daikon and store bought somen sauce

lotus root chips with salmon and yuzu miso sauce . green is a shisho or sesame leaf and i substituted lemon for yuzu.
chips fried in grapeseed oil on the mini in the JL handleless pan

seared salmon tartare with tobiko and wasabi soy sauce. minced raw samon in a ring mold into 1/2 inch hot grape seed oil in the pan on the mini then into the freezer sliced in half and plated with grilled shitakes

octopus carpacio on a bed of celery dressing si olive oil lemon juice and a touch of soy. i could not find a large uncooked octopus so i bought already steamed

Unbelievable bill! If I hadn't read the Nubo cookbook I would have sworn you just copied and posted the pics from the book. If I attempted a Japanese cook, it would take me a full week of prep. Gorgeous, just gorgeous!

quick simmered baby octopus . simmerring sauce was dashi, grated ginger , pepper . slice red jalapenos and a hot japanese pepper powder. [on the mini too ]
so ends last nights dinner.. tonights up next -
teh preceeding were all last night tonights dinner was more squid somen
more octopus carpacio
and nobu cod marinated in a mix of sake sugar white miso and mirin served with chopped spinace with sesame dressing and a rice with soy vey
cod was grilled on the mini

thank you .. it took me a long time to ,, i took the book to the store :laugh: to consult while shopping these were progressive dinners .. prep and serve one course and then on to the next.. fun if you have enough sake time for me to crash ,,

Funny....I just had my Nobu book open tonight ... mostly dreaming. I love Nobu's Hamachi with jalapeno.

it was all good .. the whole baby octopus dish was a bit hot for my taste then japanese red pepper powder was too much but i will adjust that,, and the red jalapenos are much hotter than green ones. and i got to play with my knives..

Absolutely beautiful! Making me hungry though. Now I'll be heading for the closest Japanese, although it's not Nobu.

i have eaten at nobu twice ,, much less expensive to do it myself,,, and now i have the book
next competition i can bring squid and octopus for friday night dinner .. finish off with some ice cold jagermeister :laugh: -
Oh yeah, we love Japanese food. There's a restaurant down in Wilmington called Mikimotos that we get to a few times a year... crazy, loud, brassy, visual overload atmosphere and the food is great, too.
Forgot to mention I ate at Nobu NY years ago and it blew my socks off.
Bring on that squid, octo jager.... I'll eat and rink it all!
