Stuffed pork tenderloin

This turned out so good and I have enough left over for a month. Pulled at 170 and tented for 20mins. Next time I might try pulling at 160 to see the difference.

Great looking meal. I like to pull around 145-150 as it gains 4-8 degrees and then starts to dry out.

The stuffing was bread crumbs, sweet peppers, onion, garlic, paprika, fresh parsley, rosemary, salt, pepper, onion powder, parmesan cheese and then I rubbed down with Dizzy Pigs Red Eye Express.
I wish I could share it is so delicious. -
This one weighed in around 8lbs and was one of the smallest I could find at Costco this weekend.

This one was just about right but a little moisture would have been nice.

Haa! I was looking through the garbage for the wrapping until I was slapped and told to get out of there.
