Morning all,
Has anyone done this recipe and left the dough to rise for 24-30 hours or more? By letting it set longer, are there going to be issues?
I have never made this before, and dont want to screw up on my first loaf.

Ciabatti (sp?) bread is done like this and turns out excellent. There is nothing wrong with letting dough fully develop. Usually, the recipe calls for a small amount of yeast. Not sure if you are keeping it in the fridge or open counter. Either way do not fear!

I'm not sure what recipe you are using, but I have three bowls of no-kneed ciabatta dough sitting on my dinning room table as we speak and, although I will put it into loaf form in about 18 hours, I have gone as many as 24 hours without any change in results.
