Beer Can Chicken Drippings

Eggnorance is Bliss
edited November -0001 in EggHead Forum
I just cooked a beer can chicken (ceramic "beer can"). I placed the ceramic beer can in a drip pan on top of a pizza stone. I have the beer and seasoning w/drippings, and the drip pan with pure chicken drippings.

what can you do with these two sets of drippings? seems a waste to toss.

  • How 'bout cooking up some rice or dumplins in this? Or if you don't need now freeze for another day.

I would agree with the last post. Would suggest boiling it when you use it to make sure that there is nothing living in it, since there would have been basically raw drippings at one point in time. But thats only my 2cents.

I have used the marinade from a Carne Asade recipe before, reduced it down to make a sauce to use on Carne tacos.
  • Eggnorance is Bliss,

You can reduce with some stock for a jus or just drizzle it on leftover chicken sandwiches. Great for coocking vegetables in too.
