why does it get hotter when i walk away

lit a fire in some leftover lump in the xl, put in the plate setter, put on the grill, waked away for 15 minutes and it was up to 500. Bottom vent wide open and top cap off.
I dont think I ccould do that again if I tried.

I did just clean it all out with the shop vac the other day. so there was lots of room for air flow.
