Seasoned with Dizzy Dust, Todd's Angry Dirt and cayenne

Then some cornstarch

Do the same on the other side
On the egg at whatever temp

Pull them off

Crispier than fried
For anyone that is going to try this the starch coating should be really light. If you end up with little clumps staying white on the egg just spray with a little olive oil in that area
Made a mini red potato salad. Balsamic,olive oil, mayonnaise, chopped cornichons, pickled onions, green and red peppers, sweet and red onion, dijon, salt and pepper, dill relish, sweet relish and roasted red peppers

Then some cornstarch

Do the same on the other side
On the egg at whatever temp

Pull them off

Steve - I sprinkled some corn starch on some thighs the other night and they were very crispy. Thanks for the tip! The wings look awesome.

Steve...those wings look wickid... I've never though of using corn starch to make things crispy. I usually use it to keep chicken moist when deep frying (for general tsao's chicken) and found that I've had to mix in a bit of flour to get it to crisp up.
Thanks for posting, I'm going to try the corn starch method tonight!(or tomorrow) haha

It works for me. If the starch gets too thick and won't brown you need to spray some olive or canola oil on those spots.

I'd really like any additional info on quantities for that tater salad. It looks and sounds incredible. I'm guessing you just tossed in this or that and have no idea, but thought I'd ask. The wings...well, standard issue perfection

I edited the post because no matter how you sift the cornstarch you will get some spots that have too much and won't absorb enough fat from the chicken. I just spray the spots with olive oil so they brown up.

Looks good, Steve. I've done them this way before, but don't usually bother. We like our wings just fine without the corn starch.
But I made a big batch of hot sauce last night, and when I was done, I would have given anything for this style wing to dip into the sauce. After the sauce has aged for a couple weeks, I'm definitely going to cook up a batch of these wings. -
