    For some reason I only dream about cooking Indian food, and then never actually do it. I don't know what's wrong with me.

    WOW!! Really good chicken!! Nice and crispy! I spatched a 4 pounder and sprinkled with lots of stuff - evoo, garlic pwdr, onion pwdr, chili pwdr, paprika, salt, pepper, ground coriander, ground cumin... and lastly - CORN STARCH!

    Raised direct at about 400° dome. Cherry for smoke. Threw a baking potato in a #3 CI pan to keep the chicken company. Took about an hour. Served with sliced local tomato. Excellent meal!

    Thanks for the corn starch reminder, Steve!!! You've mentioned it before, but I had forgotten. I won't forget again!!!

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Dangit Steven, those look great! Crispier than fried? Really? I'm gonna take that challenge. I will do some next week while I'm off. I've never been able to get crispy wings off a grill. I'll let ya know.
