Just took these babys of the EGG and they were GREAT....and EASY!!!
I just took my sausage mixture, that I usually stuff into casings, and wrapped soaked corn huskes around it and tied the ends. I then smoked on the EGG at 225-250 for two hours, with some cherry wood. Telling you.....VERY,VERY tasty AND JUICY!!!! This will become a regular menu item, as it's easier than stuffing casings.

I'll have some pics middle of week of another batch. I got the idea from Diners, Dives and Drive-in on the Food Network, Guy Firoeo (SP). They looked good on the show and tatsed GREAT in real life!

SWEET! I like to make my own sausage but HATE the casing hassel.Do you think they would freeze well???

Just soak the husk for and hour or so. As for freezing, not sure, but I would not want to freeze after cooked and I don't think you could freeze raw as the husk would have to be soaked again before smoking

What if you wrapped the wet husks in saran wrap, food saver and then when defrosted wet the husks a little?? just a thought!oze

Banana leaves would be good, but I don't think you will get any of the smoke flavor through the leaves. The smoke WILL permeate through the wet corn husks though..
