If it has hit 195-200 Internal temp,it is ready to eat.The only reason to rest is so it'll cool down a little to make it easier to pull.It may help with redistribution of juices like a prime rib or steak.It is done.If you are hungry,go for it!

An HOUR???!!
I'm lucky if I let mine rest 10 minutes. Pull with a couple of meat forks (it's real hot for bare hands). And enjoy!!I hate it when I go to the kitchen for food and all I find are ingredients!
