3 Hour Pulled Pork for One

Started with about a 2 1/2 pound boneless pork shoulder roast injected with Coca Cola, mustard and some Julio's seasoning, then rubbed with Julios and more mustard. On the Small raised indirect at 225 -250 with lots of pecan and hickory smoke...foil lined aluminum pie pan to catch drips. Smoked for 1 1/2 hours until 136 internal. Double wrapped and added the remainder of Coke mixture before sealing. Sealed and back on raised indirect at 350 - 375 for another 1 1/2 hours. Removed platesetter and seared for about 1 minute per side to get some char. Re-wrapped in juices and sealed. Placed in the drip pan and shut down Egg and went to the shop for a while. Pulled nicely. No sauce; the juices from the Coke and seasoning was all it needed.

Looks really good, especially the shot of the late sear. I'd have trouble not digging in right after that.
I've done something similar, but without the finish sear, re-wrap, and cool down. I'll have to put that on my must-try list. -
