So I'm getting up at 5 am to do a big cook. 4 7+ pound butts. Any tips? I completely cleaned out the egg, so that is good to go and have the butts in the fridge with the rub (since wed.). I have paraffin starters. Best way to get the coals going? I figured if I get them on by 6, then hopefully by 10 pm they will be done.
Any step by steps to get the temp stabilized would be great!
