Paella tonight - My way

I made a paella tonight. It was a little different than most.
First, I smoked up some chicken thighs raised direct at 280 dome, just to get that smokey taste I like.
Then I added some homemade chorizo (shaped in meatballs) to the raised grid for 1/2 hour or so, whoops, one moved just as I took the pic:

I sauteed some onion and garlic in olive oil (on the stove inside) and then poured in the rice to soak up some of the oil:

Added in some broth and saffron (a friend brought me saffron from Zanzibar!)and let simmer 10 minutes:
Then I assembled the paella on the egg with some chopped tomatoes and green olives, placed the chicken, chorizo, and tilapia in with the rice - cooked 30 minutes at 350 dome:

Sunset happened:

Plated picture with everything - even the rice got a slight smokey taste. Nice!!

I knew the chicken would not be done right unless I pre-egged it before adding it into the rice. And it ended up with the rice getting that nice flavaaa, too.

LOL, I've been hanging out down here about 125 miles south of you and about 125 miles west of LC. I'm looking forward to the day all the snowbirds head north and we get our state back.
Glad you liked the lamb chops, I am a big fan of just about anything you cook. Your Paella looks great and I have your Coquille St. Jacques on my bucket list.

That looks wonderful, Faith !!! Having eaten paella only once, I thought paella had to have seafood in it. So, I went to Wikipedia, and they told me that you made Valencian paella. Classy !!!

Question: I followed Gator Bait's link to your Coquille St. Jacques. I don't know how I missed that the first time around. They look yummy too. Are your scallop shells natural or ceramic? Gary, I think they are natural shells. I have them in two sizes, those were the bigger ones. I have had them forever.
The flea market near my house sells them in their kitchen gadget store. I can run over there Saturday and pick up some for you.
