Lamb chops were the fare for the day. I graced them with some of Richard's Kona Coast Rainbow Rub that he was kind enough to share with me.

The raws . . .

Seasoned . . . I omitted salt, pepper and garlic powder for Richards Kona Rub. His rub is a delightful blend and needs no help. I did use 3-4 drops (literally) of Kitchen Bouquet on each side of a chop to help adhere the rub, it also lent a little flavor.

On the egg . . . raised grid, hickory smoke wood, 500º until 120º.

All done but the eating . . . rare to medium rare depending on thickness.

The lamb chops were delightful. Richard's rub is a masterful blend that compliments the meat with out dominating. Congratulations and thanks Richard, that is a wonderful rub.

    I was thinking a nice piece of our Florida Grouper rubbed with it and cooked on the egg would be a real treat. Maybe a little melted butter brushed on before the rub. I'm making myself hungry all over again.

  • Gator, that looks soooo good! I have to run out to Costco and buy some of those lamb chops! Richard gave me the same rub, but I have yet to try it on lamb. You are right though, his Kona rub is great!

    Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

    Gator...Excellent cook!! I love those little loin chops, and you did a beautiful job with them! Richards rubs are great. I am hooked on his Indian River Pepper blend....even have a dedicated pepper grinder just for it.

    Thanks Faith, the little chops are wonderful and so easy to cook. I think the Kona rub will go with anything! Years ago I made some homemade coffee ice cream that had a good deal of Kahlua in it that I bet would have been great with some of Richards Kona rub sprinkled over it. :cheer:

    Beverage, Liqueur, Kahlua, Richard


    INGREDIENTS:
    1.75 Liters Vodka, Cheap--50%-80 Proof/50%-100 Proof
    Simple Syrup
    7 1/2 Cups Sugar
    3 3/4 Cups Water
    *******
    3 1/2 Ozs Instant Coffee-Antigua-Mocha-Heavy
    2 Whole Vanilla Beans
    10-15 Whole Coffee Beans, Vanilla Flavor if possible




    Procedure:
    1 Mix and heat simple syrup until sugar melts, let the liquid cool until warm to fingertips.
    2 Mix all of the ingredients in a 1 gallon glass jar. Shake daily to keep sugar from settling
    3 Split the vanilla beans, scrape the inner parts into the mixture, then cut the beans into 1 inch lengths and toss in jar.
    4 Jar may be kept in the refrigerator. Shake the jar once a day for 30-45 days.
    5 It is now ready to strain the beans out. Keep chilled.

    Thanks, I agree, the little chops are great. I live alone so a whole leg is not practical but I can keep some of these on hand in the freezer and they are so simple to cook.

    Richard sent me some of his Pixie Dust and Indian River Pepper that I haven't had a chance to play with yet. I have sampled on a finger tip and they are exciting to say the least. The Pixie Dust has some heat to it so I will have to be careful with that one. The Indian River Pepper is a marvelous blend that has some real mysterious and wonderfully interesting under tones to it. It is easy to see that he has put great thought into his rubs and spices and your addiction to his pepper is understandable.

    I wish I could oblige with the ice cream but I had to give it and the Kahlua up when I discovered I was diabetic. I was undiagnosed diabetic until I had 3 major heart attacks in one week. LOL, I look cross eyed at a dish of ice cream and they threaten to put me on insulin. :(

    That's has got to be the best looking recipe for Kahlua that I have ever seen, I wish I could indulge. I have book marked it for my next life. ;)
