Found a new market that had some good size poblanos
Burned off the skins at 750*
Peeled the skin
Stuffed with chorizo, onions and bell peppers with some Mexican spice
Put some cheese on.
Served with avocado, tomato, cilantro and green onion.

Looks great. I love roasted poblanos, especially when they are covered in cheese!
FaithHappily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

It was raw sausage removed from the casing and browned with onions, bell pepper and jalapeno, spices and salsa.
I didn't really notice the temperature as the egg had a long cooldown from 750. Probably in the 350* range. Added the cheese after about 20 minutes or so.
