Really, No-Knead bread?

Anyway, it is the easiest bread recipe imaginable. I mixed up the dough in about 6-7 minutes yesterday, and this afternoon made these two loaves:

It took a couple minutes to form the loaves today, then I let them sit while they rose before tossing them into the oven on parchment. the only thing I'd change is I might let them rise a couple hours (like NYT recipe recommends) rather than the 45 minutes or so my neighbor's blog mentions.

but it sounds like it's very hard to get a thin crust with this (if that's what you like).
