Really, No-Knead bread?

Well, my food blogging neighbor is at it again, changing what I know about food prep. Here is her recipe for "No-Knead Bread": http://italiandish.squarespace.com/imported-20090913150324/2010/2/26/amazing-artisan-bread-for-40-cents-a-loaf-no-kneading-no-fus.html#comments

Anyway, it is the easiest bread recipe imaginable. I mixed up the dough in about 6-7 minutes yesterday, and this afternoon made these two loaves:

It took a couple minutes to form the loaves today, then I let them sit while they rose before tossing them into the oven on parchment. the only thing I'd change is I might let them rise a couple hours (like NYT recipe recommends) rather than the 45 minutes or so my neighbor's blog mentions.
There is also a pizza dough version out there: http://tastingtable.com/entry_detail/99/Jim_Lahey_reveals_his_recipe_for_no-knead_pizza_dough_.htm
but it sounds like it's very hard to get a thin crust with this (if that's what you like).

I've made the original many times but only in a boule shape. I'm going to try your loaves. Thanks for posting. Bill

I've made the orig many times. A different shape tho, due to the shape of my pan I bake it in.
I may try the pizza dough. Love trying new pizzas. I did one once that was very wet. I just 'pushed' it into shape on the parchment and it made great-tasting pizza. Maybe not the prettiest, but definitely tasty.
