4 lb. standing beef rib roast (2 bones), starting at room temperature, raised rig direct, 275 dome temp, to get to 125 internal, plus resting in foil for 15 minutes? Thanks Eggheads!

I would let rest for 30-min.

I have done a 4 pounder without the rib bones at 250 dome and it took 3 hours. I let it sit out for a couple of hours prior to cooking but it was far from room temp.

I know this thread is useless without pics, but I was hungry, so no pics. A half hour out of the fridge got it to 45*. Cooked it between 275 and 300 degrees for 2 hours until it reached 125 internal. Rested for 15 minutes. Couldn't wait any longer. Mrs. 500 was hungry. Turned out real nice.I like my butt rubbed and my pork pulled.
