Hello all,
I was wanting to try homemade pastrami and looking at recipes on the net they don't use the whole packer.Is there a reason I shouldn't do the whole brisket as pastrami? It looks like I would onlu cook the brisket to 165 internal,is that correct?

There are a couple pastrami recipes on this great site.

ive never seen one as a whole brisket, usually just flats or points, are you curing it on your own or finding whle packer sized cornedbeeffukahwee maineyou can lead a fish to water but you can not make him drink it

as to why not a packer?? my guess is that the dicrepency in thickness means differt brining times for the point vs the flat and it is just easier to do them separately

mmmmmmmm pastami, and a nice thick pastrami burger, cook a burger and pile the pastrami on nice and thick. Nothing better, a rubin sounds good about now too.
Richard Fl put a link to thirdeyes recipe page and there are a lot of good cooks there. Here is a direct link to a great cooking method of pastrami. I like the wet method.

I use the flats and sometimes just pick up a corned beef at the market. Those usually need a log rinse.

You can cure as big a brisket as you need(or want). I did a 6-7 pound one a few weeks back. Here is a link to my post.
