Pastrami ?

Hello all,

I was wanting to try homemade pastrami and looking at recipes on the net they don't use the whole packer.Is there a reason I shouldn't do the whole brisket as pastrami? It looks like I would onlu cook the brisket to 165 internal,is that correct?
