Peel the sweet tators, slice in fries (no more than 0.5" thick), put the fries into a bowl of ice for about 15 minutes. Spread the fries something (these are on a grill sheet I grabbed a Wal-Mart) and add a little EVOO and seasoning (used DP Pineapple Head on these). Here they are just after seasoning before going on the Egg...
Then onto the Egg, this was direct on a raised grid with a dome temp of 350 to 375. Time cooking was a total of about 25 to 30 minutes, moving them around a couple of times to reduce too much browning (burning) on one side. Pretty simple actually or I wouldn't be able to pull it off!Have a GREAT day!

Also, have you ever tried potato fries instead of sweet potatoes using this method? -

I have done regular tator fries once, but really like the sweet tator ones better...just my preference.Have a GREAT day!

The screen I did the fries on should be available at Wal-Mart (I think I got these at Wal-Mart), Target or Ace Hardware. Usually a package of 2 or 3 for less than $2.00. Great for one or two uses then tossing in the trash. I sprayed this one pretty heavy with Pam and will use it again since not much stuck to it.Have a GREAT day!

And healthy for you, too! How long did the tilapia and sweet potato fries cook? I imagine the potatoes took a bit longer. LOL Great stuff!
