Versatility wise, it has to go to thyme. My poor thyme plant can't keep up with me, as I visit it for a trim nearly daily while making dinner.
Flavor wise, it has to go to cilantro, and Thai basil.
But in actuality, I have never met an herb I didn't like!

But then I would miss Dill on fish and ground sassafras in my gumbo

Me too. I used lemon balm last night for the first time in a while and it was great. Tonight it was thyme, rosemary, savoury and parsley.

Thyme - for the richness it adds. When I think of thyme, I think of the taste of a sofrito.
Rosemary - for what it does as part of a crust on red meats.
Sage - where would roast turkey or stuffing be without it?
Cilantro - I like cilantro best used raw; I put it in stuff that does not get cooked, or on stuff after it's cooked. On a steak that has been marinated for 15 minutes in vinegar and soy sauce, it's amazing.
For me, each of those herbs serves as a primary base (the key that the music is in). Other herbs combine to make the tune.

I have to go with hops. You know, the kind they brew with. Second, I would have to agree with Thyme, it goes with almost everything . . . like hops.

I agree with whoever said it's an impossible answer.
Italian = basil, oregano
TexMex = cilantro
Chicken = rosemary

In August of '07, as I recall it, we were e-visiting about herb flavored bread and about a week later I got the unmarked bag of spices & herbs from you with instructions on how to use it.
