Going on 19.5 hrs and the 9lb butt is still not done! Sure hope it hurries....company will be here at 6, and I was hoping to let it rest in a cooler for a bit. It's at 193 now, the other one is already in the cooler waiting on its brother to show up.

You only have 2 or 3 more degrees until you pull. You are all but done.

Don't worry, its done now and will pull just fine. I've taken them off at 185 foiled and rested them and they are just fine. I usually pull mine at 190 because I think the product gets too mushy after 200. -RP

It could geaux in now if you wanted to put it in. Perfect timing.

Take it out now. 193 is plenty for a butt. Butt's are VERY forgiving. I've never screwed one up.The Naked Whiz

You don't have to use a cooler. In fact, I have never used one. If it's done and you're ready to eat, eat. You will have to use forks to pull it though. Will be too hot to do it by hand. But it sure is good!!

I concur with the majority opinion. 193 is good enough to pull. You can take it off, wrap it in foil for a bit and then pull right as your guests arrive.
