    ask yourself what the reason for the Trex is? well, one of the reasons....

    to allow the meat a chance to even out in temp. cooking tenderloin like this, or searing in a pan, then roasting, is a classic way to divide the cook into stages. one creates the sear and browning, the other roasts to a desired finished temp.

    sear and roast. roast and sear. warm gently (hot tub) and then sear. slow roast, then sear at the end.

    all are methods dividing and conquering either roasts or big chunks of meat.
