Please make sure you calibrate your thermometer(s).
Congratulations on your eggs and welcome to the forum.
Stop with all the practice firings and get cooking. The egg is no mystery it is a very forgiving cooking machine.
If you are intimidated put on some chicken or burgers or heck just brats, heck even some grilled tuna or grilled cheese sandwiches are even great.
Grilled Tuna on the mini (works on any egg).
Some stuffed peppers.

Good tip Grandpa. We calibrate all 6 of our eggs' thermometers every time we compete. The thermometers are of a good quality, but they need adjustment from time to time. I always check in boiling water if I am cooking expensive meat, committing to a long cook, or going for prize money. Or 5,000 miles, whichever comes first ;-)

I did the boiling water test on my BGE dome thermometer and it read 190°. I didn't see any dial that I could crank it up to 212° Do I just remember that it's 22° hotter than it shows?

There is a nut on the back of the thermometer sort of around the probe. Just take a wrench and turn it against the display a little at a time till you hit 212 or whatever your boiling point is.

On the back of the thermo there is a 1/2" hex nut. Hold the dial steady and twist the nut until it reads 100 C in boiling water.

I just tested mine before I posted. All 4 were off a little 2 were off 30°.
A light to medium coat of Raging River on the Christmas ham which was injected with maple and sitting on 1/2 can of concentrated orange juice turned out to be one of the best hams in 4 years.
I was going to toss those drippings but the combination of the OJ, RR and Maple was something else.
Sometimes the flavors of the rubs, food and work of the egg is just fantastic.

Many times I do the boiling water test it doesn't work...be careful!
I take my thermapen to check the boiling water after I put it in something to check the egg thermo.
Many times the thermapen (which i trust) will read 198 and if I had adjusted the egg to 210 i would overshoot the adjustment by too much! -
Sounds like you are well above sea level. You have to adjust for elevation when you are doing the boiling water test.

Interesting. Your thermopen should not be more than 1 to 2 degrees off. Altitude difference is about -0.5° for every 500' elevation.
I get a pan at a rolling boil and test the thermometers and adjust as necessary. Recheck and reajust if necessary.
However, + or - 15° off on the dome thermometer isn't really too big a deal.

Thanks for the correction Kent. I keep two wrenches out by the Eggs. One 1/2" and one 7/16". I knew it was one of those two sizes, and I just chose the wrong one. Thanks for heads up.

Thank you soooo much for the support and saying it's forgiving! Yes, I am SOOOOO intimidated!! Also doesn't help that we have 5 inches of snow on the ground and it's 20 freakin' degrees!
